Prawn & Mango Salsa Lettuce Cups

Ingredients:-

4 cooked king prawns, shelled & deveined
1 tblspn finely chopped coriander
1 mango
1 small red chilli, deseeded & finely chopped
1 butter lettuce
Juice of 1 lime

Method:-

Wash 4 large lettuce leaves and allow to dry. Chop prawns roughly and place into a bowl. Cut mango into cubes and add to bowl with prawns. Add chilli and coriander and mix together. Place equal quantities onto lettuce cups, top with lime juice and serve.

Per serve: Kilojoules 195   Fat 0.3g   Carbohydrate 6.5g   Protein 4.5g

Risoni Salad

Ingredients:-

2 cups cooked risoni
250gm cherry tomatoes, roasted
4 cloves garlic
4 tblspn grated Parmesan cheese
4 tblspn chopped parsley
1 tspn olive oil

Method:-

Place all ingredients in a salad bowl and season to taste

Per serve: Kilojoules 770   Fat 6.1g   Carbohydrate 23.5g   Protein 8g
