Prawn & Mango Salsa Lettuce Cups
Ingredients:-
4 cooked king prawns, shelled & deveined 1 tblspn finely chopped coriander 1 mango 1 small red chilli, deseeded & finely chopped 1 butter lettuce Juice of 1 lime
Method:-
Wash 4 large lettuce leaves and allow to dry. Chop prawns roughly and place into a bowl. Cut mango into cubes and add to bowl with prawns. Add chilli and coriander and mix together. Place equal quantities onto lettuce cups, top with lime juice and serve.
